Don’t be afraid to experiment with dumplings – add your own flavours to compliment your dish!

Chicken Kofta
Serves 6
Ingredients
1kg minced Chicken
150g Suet
2 medium onions diced
1 clove garlic chopped
50g garam masala
50g cumin
100g chopped coriander
Method
Sweat onions, garlic and spices in a pan without colour and set aside to cool.
Put minced chicken and suet together in a mixing bowl and then add the cooled onion and spice mix and seasoning.
Cook off a little of the mix to check the seasoning and flavour.
Divide the mix into 90g pieces, roll into sausage shape and put a skewer through the kofta length ways.
Place onto baking tray and bake for 15mins at 160°C.
Serve 2 per portion with mint yoghurt or mango chutney.
